Crepes


My favorite dessert, I mean breakfast is crepes. I like them with strawberries, cream cheese and whipped cream.

1 cup all-purpose flour
1/4 cup sugar
3 eggs
1 1/2 cups milk
3 tablespoons butter, melted
1 teaspoon vanilla extract

Blend everything in blender. Use a small non-stick skillet with cooking spray over med. heat. Pour enough in the pan to swirl it around. Cook until the edges are lightly brown. Use a fork to loosen the edges and flip. Cook 1 min. more. You could make these so many ways:

~Butter with powdered sugar
~Canned pie filling
~Whipped cream
~Scrambled eggs
~Brown sugar and sour cream
