Nachoooo! Meat



Nacho Meat

2 1/2 lbs ground beef
8 oz can tomato sauce
1 small can tomato paste
red pepper flakes (to taste)
salt
pepper
2 TBS. taco seasoning
1 TBS dried onion flakes

Put everything in crockpot. Cook on high for 3 hours. At about 2 hours break the meat up and drain the oil. Use for any mexican dish that has meat; nachos, tacos, enchiladas, chimichangas, whatever!

Skillet Corn


1/2 c. butter or margarine
1/2 onion, diced
1/2 green or red pepper, diced (optional)
1 bag frozen corn
1 T. cumin
2 t. chili powder
2 t. salt
1 t. black pepper
1/8 t. cayenne pepper

In a large skillet, melt butter or margarine over medium heat. Add onion and optional peppers. Cook until onion is translucent. Add corn and seasonings. Cook, stirring often, until the corn begins to get just slightly crisp. The seasonings can easily be adjusted to taste.

This dish works well as a stand alone side dish, or on taco salad, nachos, tacos, etc.

Cowboy Caviar



1 - 15 oz can of black beans (drained and rinsed)
1 – 15oz can of corn (drained and rinsed)
2 – cans Rotel tomatoes with green chiles (drained)
2 – small cans sliced olives
2 – avocados
1 – C. red onion, diced
2-3 teaspoons of garlic salt
chopped cilantro to taste
splash avocado with lime juice to keep it green



Add all ingredients to a festive bowl and mix well. Serve with tortilla chips!



It's as easy as that!
